Intense 1-on-1, two-hour-long class presented on Zoom where you will learn the most important things involved in achieving open crumb sourdough.

Major focus on starter care and maintenance. Learn tips and tricks for how to keep your starter strong, vigorous and happy so you can be happy. You'll be taught how to read your dough and recognize when it's well-fermented. Master the art of fermentation! Learn about good oven spring and bread ear, and how they are connected to under-proofed and over-proofed bread. Videos with each step of the process will be sent to your personal email. Prepare all of your questions to be answered. After the class, more help will be offered if needed. You'll be able to keep asking more questions and to share your bakes to be analyzed. You must have an established starter since how to create one is not covered in the class.

What to expect

  • Learn unique tips and tricks to build and maintain a strong starter. A personalized care plan for your starter will be offered. Control the acidity of your starter, and learn how to make it triple or more in size. Find out when your starter is at its peak.

  • Have control over fermentation, and master it. Learn how to watch the dough, not the clock, during bulk fermentation. Don't be afraid to ferment your dough well and achieve open crumb.
